At this time, we're not enforcing specific Monster changes beyond the mandatory ones - and even those are up to interpretation! When in doubt, you can absolutely ask for clarification, but even families of Monsters find that not all of them manifest in the same way. The same applies to new arrivals.
That being said, for your example - unless a Monster is a Chimera-type, or is a "naturally" occurring mutt/hybrid Turnskin (see: domesticated dogs, wolf dogs, ligers, etc), they can only be one species of animal. So unfortunately, no mixing moth with beetle, unless there's already a natural or "natural" hybrid of one.
Moving along: while the Monster in question may appear to resemble a naturally occurring animal - say, a monarch butterfly Fae - there can be differences in patterns and colorations based on the character in question. For example, if Steven were this hypothetical Fae, the colors in his wings could reflect those of the gems or his general color theme while still resembling the monarch pattern. Have fun with it!
As for traits that a Fae can manifest with besides wings, these can all be found in depth in both the mandatory and optional changes. This does include pointed ears, on top of the insectoid traits available to them! They wouldn't be the fairfolk without that aesthetic change, after all.
