1. They can experience changes before becoming undead or after, or a mix of both. It's up to you.
2. "The Death" for a vampire can occur anywhere in the 3 to 9 months it takes to fully change. IC deaths outside of The Death that makes a new vampire undead are rare, but you're welcome to make their shift into the undead a little more dramatic than weakness and illness if you want - though any traumatic injuries causing said transition would not be immediately healed upon waking.
3. Hearing heartbeats is a potential change you're welcome to include. Undead vampires do not generally have heartbeats themselves.
4. It would depend on how recently the vampire being fed from had fed themselves. A freshly-fed vampire will provide better blood than one who hasn't eaten recently. It's still considered a pretty desperate move, though, with so many humans, Witches, and Monsters in the city to drink from.
